Calcotada in the Pyrenees

The Spanish love their onions and roast these sweet fat scallions over vine cuttings in the spring, at hugely popular festivals. But
Northern Catalonia (otherwise known as France) also likes to celebrate their spring onions in a traditional feast of barbecued  young calcots.Here in Eus we sampled them, served with romesco sauce.
